I did it to my 2001 Benny when it was about 14 years old. Took me 5 weekends and I am a seasoned DIY'er. Every single thing has to come off the deck, and some bolts are hard to access or rusty. As for the helm, don't disconnect all the wiring and control cables. Unscrew / unbolt it, cut all the tie wraps to give you slack on the wires, and lay the entire console carefully on its side on something next to the deck. (My county-provided rolling trash container was the exact perfect height.)
I got my vinyl from ponstoonstuff.com. Great company to work with. I paid about $700 for a kit including glue. It does get hot on those 100 degree sunny days, but a little water from the lake solves that problem instantly.
