Find a local woodworker. I plan to make a new top for mine but haven't gotten to it yet. I would make one with higher sides to better hold the snack tray
The industry has standardized on pedestal diameter and fit. Many are available on the internet. A cheap table that you find on the internet for $150 will be light and feel cheap when you wrap your fingers around the thin edge. The table that came with my Bennington and my old Premier is thick, heavy and solid. You might consider buying a table from OEM service parts so you can inspect before you buy.
KingBoard, easy to cut and customize, and for drinks you can drill holes for wine or cups to ensure no spill. Something like this from boat outfitters:
