Hydraulic Steering

I forgot to address your concern of not letting go of the wheel because of the steering torque and not allowing your kids to drive as a result.   The standard SeaStar hydraulic steering will take care of that.  You can take your hands off the wheel at any time.  No torque, no worries.  Your kids will be happy. :)
 
On my 19' Hurricane deck boat mono hull with a 125 Merc and cable steering I never had a torque steer problem so I assumed that I wouldn't with the toon as well. I can't imagine it will be terrible but if I need to switch to hydraulic will it be difficult with factory installed under sheeting? Could hoses, etc be routed over the toons and between the deck?
 
Depends. My S has wave shields, so lots of space to work around. The only full sheeting is the last 4 feet or so, but that will be no problem since you can still reach in there. Worst case you tie a rope on and feed that in while you pull the cable out.
