I forgot to address your concern of not letting go of the wheel because of the steering torque and not allowing your kids to drive as a result. The standard SeaStar hydraulic steering will take care of that. You can take your hands off the wheel at any time. No torque, no worries. Your kids will be happy.

On my 19' Hurricane deck boat mono hull with a 125 Merc and cable steering I never had a torque steer problem so I assumed that I wouldn't with the toon as well. I can't imagine it will be terrible but if I need to switch to hydraulic will it be difficult with factory installed under sheeting? Could hoses, etc be routed over the toons and between the deck?

Depends. My S has wave shields, so lots of space to work around. The only full sheeting is the last 4 feet or so, but that will be no problem since you can still reach in there. Worst case you tie a rope on and feed that in while you pull the cable out.
