i actually just picked one up yesterday. now i need to rig it up on the boat. I'll share pics when i get to it later this month if anyone is interested...
i do the same actually.... for me its the time between uses that i need to stay topped up. i have middle toon storage and a bilge pump that can drain things when i get a lot of rain, and/or don't get out on the water frequently enough...

some pics/video while running normal/turning would maybe help too? tough to say, but i'd bet you are mounted too high....
that said, trimming down while turning in a pontoon is pretty normal or you'll ventilate/blowout the prop. I haven't heard of overheating in the process till now though...
I think the too high mounting is an issue probably. a couple pics will help. that said, most motors come in a regular and long shaft model... based on this comment, your dealer may not have used the right lower unit...
couple thoughts... i'd highly recommend having one battery be a starting battery and the other a deep cycle to run at anchor. the other suggestion (i'm currently assembling myself), would be to grab something like a cheap 25W solar panel from harbor freight, and a solar charge regulator...

also, it's normal to need to trim down when turning (especially when doing watersports) with a toon. that was something i had to learn, lol...
