Raising the dock roof is not an option, 8" I beams etc involved.I would look at raising the canopy. Certainly easier than cutting up your bimini frame. No way would I do that.
Depending on wind and sun direction pontoon tops provide protection only half the time. That’s why people stand up half the time when it is raining. Even after a significant chop of the top the boat will still have an open feeling when you are sitting down. All pontoon tops are too tall for good sun and rain protection. The tallest person I know took a foot off the top and is happy he did. Most of the time we are sitting down. I once asked the old marketing manager of Premier pontoons ‘why so tall?’ She said lower tops feel good out on the lake but for some reason not on the showroom floor. They have to get past that.
I have cut down a top. One saw cut leads to another. If you are picky a fabric tuck is also involved. I used ‘c’ clamps to temporarily clamp the tubes at the new proposed pivots. This allowed me to see changes before sawing. Keep in mind that all the hoops must fit in the boot when folded. It’s worth the effort.
